Ingredients

1 pack of Eisberg Lamb’s Lettuce
2 ripe pears
12 dkg cream cheese
5 dkg chopped walnuts
salt, pepper
1 tablespoon of extra virgin olive oil
a few drops of lemon juice
2 tablespoons of extra virgin olive oil
salt, pepper

Directions

Prepare the cream cheese. Mix the cheese with the walnuts and olive oil, season with salt and pepper to taste. Cut the pears in half, core and brush the cut surfaces with lemon juice to prevent browning. Mix the salad with the oil, season with salt and pepper and arrange in a bowl. Fill the pears with the cream and place on top of the salad.

Eisberg’s tip

Add more autumn fruits to the salad for extra variety, or for a more distinctive flavor, use rucola (rocket) or mix in a little sheep’s cheese with the other cheese. If you’re worried about the pears swelling, cook them in lightly sugared water with a splash of lemon juice before using. A teaspoon of honey can make the dish even more flavorful and piquant.
