Marinated orange green salad
Ingredients
1 pack of Eisberg Bolero mix
1 pack of Eisberg Lamb’s Lettuce
1 pack orange
1 orange juice from oranges
1 medium piece of purple onion
0,25 medium fennel
0,5 dl olive oil
1 pinch of salt
pepper to taste (freshly ground)
3 tablespoons of olive oil
1 teaspoon of honey
Directions
Peel the orange and segment it. Squeeze the juice from the other orange and mix with the olive oil. Season with salt and pepper. Slice the red onion into thin rings and add to the diced orange. Pour the olive oil dressing over the whole mixture and cover and refrigerate for a few hours. At the end, toss with the lettuce leaves and the thinly sliced sweet onions. Mix the orange juice with the olive oil and add the honey. Toss with the salad before serving.
Eisberg’s tip
If there are no oranges, you can substitute with peaches.
