Salad roulades in Italian style
Ingredients
1 pack of Eisberg Verona or Bolero mix
1 bag of Eisberg Oriental dressing
8 pieces of rice paper
8 sun-dried tomatoes in oil
4 slices of Abraham prosciutto crudo
16 basil leaves
Directions
Prepare the rice papers. Take a bowl big enough to fit the rice papers and fill it with cold water. Let’s prepare a kitchen towel folded in four. Place a sheet of rice in the water for approx. half a minute until it softens. If it soaks too long, it tears easily and loses its elasticity. While the rice plate is soaking, thinly slice the sun-dried tomatoes. Take the rice plate out on a kitchen towel and let it rest for a short time. Put two basil leaves in the middle, sprinkle the salad and chopped tomatoes on top, then cover the pile with half a slice of ham. Press the filling a little and roll up the rice sheet. Serve an oriental sauce on the side, in which you can dip the roulades.
Advice from our Dietitian
Sun-dried tomatoes are the concentrated taste of summer, offering a unique flavor that can enhance dishes during autumn, winter, and even the coming spring months. With their intense tomato flavor, they are a true gourmet treat when chopped into small pieces. They are incredibly versatile and can be eaten on their own, used in red pesto, or paired with baked goods, pasta, cheese, and meats. They also add richness to salads, like in this delicious dish. Sun-dried tomatoes are often available preserved in oil, but you can also make them at home using an oven or a dehydrator. Rice paper is a staple in East Asian cuisine, made from rice flour, tapioca starch, salt, and water. The sheets are thin and brittle, but when soaked briefly in a bowl of cold water—always one sheet at a time—they soften and become pliable. After soaking, let the rice paper rest for about a minute; this reduces stickiness and makes it easier to roll. By following these precautions, rice paper is simple to work with and worth trying! Rice paper can be used to make authentic Asian dishes like spring rolls or sushi, or you can fill them with various stews, vegetables, or salads. You can use rice paper raw or cook it after filling. Chinese and specialty food stores offer rice paper in a variety of sizes, shapes, and patterns.
For Expectant Mothers: Meat plays an important role in the diet of pregnant women due to its valuable protein, vitamin, and mineral content. Pregnant women are advised to consume low-fat meats like chicken, turkey, beef sirloin, or pork tenderloin 1–2 times daily, as well as lean processed meats like chicken or turkey breast ham, boiled ham, or delicate silk ham. The prosciutto crudo in the recipe is a raw cured ham, which should be avoided during pregnancy. Instead, opt for the aforementioned hams or prepare the salad rolls with cooked ham.
For Gluten Intolerance: This recipe can be prepared without modifications, as all the ingredients are gluten-free.
For Lactose Intolerance: The ingredients in this recipe are lactose-free, and the salad rolls can be made without any changes.
