Mediterranean Salad with Grilled Peaches
Ingredients:
1 pack Eisberg sliced iceberg lettuce (240 g)
1 pack Eisberg lamb’s lettuce (80 g)
1 pack Eisberg baby spinach (80 g)
2 peaches
2 tbsp pine nuts
2 tbsp hazelnuts
80 g olives
80 g sun-dried tomatoes
150 g mixed cherry tomatoes
½ red onion (approx. 50 g)
100 g fresh mozzarella
a pinch of coarse black pepper
2 tbsp olive oil
For the dressing:
1 pack Eisberg cold-pressed peanut and pistachio oil blend (20 ml)
5 ml balsamic vinegar
1 tsp smoked paprika
salt and pepper
Preparation:
Wash the peaches thoroughly, cut them into wedges, and grill them in a hot pan until lightly golden.
Toast the pine nuts and hazelnuts in a dry pan over medium heat for 1–2 minutes, then set aside to cool.
In a large bowl, combine the Eisberg iceberg lettuce, lamb’s lettuce, olives, sliced sun-dried tomatoes, halved cherry tomatoes, fresh spinach, and thinly sliced red onion.
Tear the mozzarella over the salad, sprinkle with coarse black pepper, toasted pine nuts, and hazelnuts, then add the grilled peaches on top.
Drizzle with the dressing and serve.
Eisberg tip:
This recipe can easily be adapted seasonally with other fruits such as watermelon, plums, or figs. For a vegan version, simply use a plant-based cheese alternative.
