Feta Green Salad

Ingredients:
1 pack Eisberg Puszta salad mix
1 bunch fresh chives, finely chopped
1 bunch dill
2 tbsp fresh tarragon (or 2 tsp dried)
100 g feta cheese

For the dressing:
8 tbsp extra virgin olive oil
3 tbsp lemon juice
½ tsp salt
1 tsp sugar
1 tsp Dijon mustard

Preparation:

Finely chop the chives, dill, and tarragon. If using dried tarragon, add it to the dressing so its flavors can fully develop in the oil.
In a small bowl, mix together the olive oil, lemon juice, sugar, mustard, and salt to taste – this will be your dressing.
Just before serving, toss the Eisberg salad mix with the fresh herbs in a large bowl. First drizzle over half of the dressing, then taste and add more as desired.
Crumble feta cheese over the finished salad and serve immediately.
